I haven’t made this in about a year, whether that is because of the sun or just lack of rhubarb I’m not sure! So this is how I made it…
Ingredients:
- 500g Rhubarb
- 100g Caster Sugar
- 100g Plain Flour
- 100g Oats
- 100g Butter (unsalted)
- 4 tbsp of Demerara Sugar
- Zest of a orange Cooking Time: 45 mins- 1 hour Preparation Time- 20 mins
Method
- Cut the Rhubarb into 1 or 2 cm pieces.
- Put the cut rhubarb in a over proof dish. Now add the sugar and orange zest, Make sure you have room to put the crumble on top.
- Cook the rhubarb for 10-20 mins until you can smell the rhubarb and a fork comes out easily.
- Whilst the rhubarb is cooking, mix the rest of the ingredients into a bowl and work them until they look all crumbled together and have a crumbled consistency.
- Remove the rhubarb from the oven and pour the crumble on the top. Bake this in the oven for 30-45 mins.
- Take it out when you think it is right.
- Serve with ice cream!
